We love this foolproof recipe for flavorful, crispy chickpeas that turn out perfectly every time! They are delicious on top of soups, salads or work as a great snack on their own. Chickpeas are high in fiber and protein which helps you feel full and energized.

  • 15 oz chickpeas (drained and rinsed)
  • ½ teaspoon ground cumin
  • ½ teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon ground coriander
  • ½ teaspoon sea salt
  • ¼ teaspoon freshly ground black pepper
  • ½ to 1 tablespoon olive oil


  1. Preheat the oven to 400 degrees F.
  2. Lightly spray a baking sheet with cooking oil (olive oil or avocado oil) and set aside.
  3. Drain and rinse the chickpeas.
  4. Put the chickpeas on a paper towel lined plate and pat dry. Let the chickpeas dry on the paper towels until they are dry.
  5. Transfer the dry chickpeas to the prepared baking sheet.
  6. Bake in a preheated oven for 15 minutes plain without any oil or spices.
  7. After 15 minutes, remove the chickpeas from the oven and drizzle ½ tablespoon of olive oil over the chickpeas (adding more if necessary), stirring until evenly coated.
  8. Add the spice mixture until evenly distributed.
  9. Bake at 400 for 10 additional minutes and stir the chickpeas.
  10. Return to the oven and bake for an additional 5-10 minutes until desired crispiness is achieved (a total of ~30-35 minutes).
  11. Turn off the oven and open the jar so it’s propped ajar. Let the chickpeas cool in the oven to achieve maximum crispiness.
  12. Serve with your favorite recipe, or enjoy as a snack on their own.


Store these roasted chickpeas for up to 4 days in an airtight container at room temperature.
